Spicy Tomato Basil Soup

Serves 6 – 8

Move over, Chicken Noodle.  Yes, you provide many healing properties but there’s a new soup in town that guarantees to keep our immune systems revving to prevent pesky colds.  Looks like we might not need you as much with Spicy Tomato Basil Soup by our sides—no hard feelings.



2 Tbsp. extra virgin olive oil

1 onion

2 cloves garlic

6 C. vegetable broth

2, 28 oz. cans peeled & whole tomatoes

1 tsp. red pepper flakes

¼ C. fresh basil

¼ C. heavy whipping cream (optional)

Salt & pepper to taste


In a stockpot, sauté garlic and onion on low heat with two tablespoons olive oil.  Add vegetable broth, tomatoes and red pepper flakes.  Let simmer on low heat for one hour.  Add fresh basil.  Simmer for another 20 minutes.

In 3 batches, with a reserve bowl handy, transfer stockpot contents to a blender and puree until fully smooth.  Pour first batch into reserve bowl and repeat for batches 2 and 3.  Pour soup puree back into stockpot.  Add cream, salt and pepper and let simmer on low heat for another hour, stirring occasionally.  Serve warm or chilled.

Just you and your honey for a romantic evening?  Quarter the recipe.  Freezes well.
