Strawberry & Asparagus Quinoa Salad

Serves 6-8

Oh, spring produce!  Your pops of color brighten my day.  Your flavors and textures inspire my senses.  Oh yes!  You are my muse and Strawberry & Asparagus Quinoa Salad is my ode to you.

Ingredients:

5 C. water

1 C. ice

1 C. quinoa

1 bunch asparagus, trimmed

6 oz. basket organic strawberries, hulled & quartered

1/4 C. olive oil

Juice of half an orange

1 Tbsp. apple cider vinegar

1 tsp. dried oregano

1 tsp. sea salt

1 tsp. pepper

½ C. balsamic vinegar

1 ball burrata cheese, divided for each dish (optional)

Directions:

Rinse quinoa well and drain water.  Place 2 cups water with quinoa into small pot on stove.  Bring to a boil, reduce to a simmer and cook until done, about 15 minutes. Transfer to large bowl and chill in fridge.

Bring another 2 cups of water to a boil.  Add trimmed asparagus and cook for 8 minutes.  While asparagus cooks, place remaining water and ice into a baking dish.  Shock asparagus in ice water. Remove immediately and cut into one-inch pieces.

Reduce balsamic vinegar down to 2 Tbsp. on low heat.  It should take about 15 minutes.

To assemble, toss strawberries and asparagus and quinoa in dressing.  Serve topped with burrata and drizzle of balsamic reduction.

    Hi Kelsi,

    I use it as both, really depending upon the time of day and the structure of my meal. You’re right, it makes a fabulous healthy lunch dish. For dinner, I’ll roast a whole chicken and serve the quinoa salad as a side.
