Grapefruit Chicken Salad

Those day spas have it made in the food department.  No booze, no fat, just light, airy and nutritious options on their menus.  You feel like an angel when you dine there.  Here’s a little secret: the Grapefruit Chicken Salad is a pleasingly light, spa-worthy entrée.  Now you can have a spa escape right in your backyard.


1 lb. organic chicken breast

½ grapefruit, peeled & cut into 1-inch pieces

½ C. purple grapes, halved

¼ C. fresh mint, torn

¼ C. non-fat plain Greek yogurt

1 Tbsp. Dijon mustard

1 Tbsp. fresh grapefruit juice

Sea salt & cracked pepper


Preheat oven to 350.

In an ovenproof glass dish, season chicken with salt and pepper.  Place in oven and cook for 35-40 minutes.  Let cool and cut into 1-inch cubes.  Add to grapefruit, grapes and mint.

Whisk yogurt, mustard and grapefruit juice in a small bowl.  Pour over chicken salad.  Round out the meal with spinach and whole grain bread.
