Pumpkin Spiced Granola

Makes 12 servings

You love summer so much that it should be your middle name.  That is until the smell of pumpkin everything pops up at a Starbucks near you.  And like that, you’ve retired your bikini for boots, your iced latte for a warm drink and your previous middle name to, yep, “Autumn.”  So, in the spirit of all things autumn, why not also trade your usual breakfast cereal for Pumpkin Spiced Granola?


2 C. rolled oats

2 C. raw, chopped pecans

1 C. pumpkin seeds

1 C. dried cranberries

¼ C. flaxseed meal

¼ C. oat bran

¼ C. wheat germ

¼ C. rapeseed or canola oil

¼ C. 100% pure maple syrup

2 tsp. pumpkin pie spice


Preheat oven to 350.

In a large mixing bowl, place oats, nuts, seeds, dried cranberries, flaxseed meal, oat bran and wheat germ.  In a separate bowl combine oil and syrup.  Using a wooden spoon, stir the oil mixture into the dry ingredients until moistened.  Spread all ingredients out onto a baking sheet and bake for 25 minutes, or until oats become a light, golden brown.

Tastes delicious and keeps you satisfied all morning when paired with plain Greek yogurt.

FOOD THAT LOVES YOU, TOO:  Maple syrup is a power player in this recipe.  An excellent source of both Zinc and manganese, two minerals that work well together to protect your immune system, make maple syrup your go-to sweetener as flu season sneaks up on you.
