Oats, Orange & Hazelnut Cookies

Makes 3 dozen

There’s a sign in the break room that reads “Dear Betty Crocker Wannabe, stop it with the cookies.  You may like to bake, but my pants are too tight and it’s all because of you.”  Hold the pause button—all you wanted was to rinse out your Tupperware, but OK, you’ll go there.  You grab the sign, pen in hand, and write, “Sorry Bitter Butterball, I turn 2 PM frowns upside down, one cookie at a time.  P.S. Better your pants than mine.”

Ingredients:

1 1/2 C. whole wheat flour

1/2 C. wheat germ

1/2 C. rolled oats

1 tsp. cinnamon

1 tsp. sea salt

Pinch of baking soda

3/4 C. unsalted butter (room temp)

3/4 C. brown sugar

1 egg (room temp)

1 tsp. vanilla extract

1 Tbsp. freshly squeezed orange juice

1 Tbsp. orange zest

1/2 C. raw hazelnuts

1/2 C. semi-sweet chocolate chips (optional)

Directions:

Preheat the oven to 350.

Combine flour, oats, cinnamon, salt and baking soda in a medium-sized bowl.  Set aside.

With a mixer, cream together the butter until and sugar until combined.  Beat in the egg, vanilla, OJ and zest.  Gradually add the flour mixture into the butter mixture until dough is thoroughly combined. Lightly mix in nuts and chocolate.

Using a tablespoon to measure, place dough in four rows of three onto a cookie sheet.  Bake for 10-12 minutes.  Transfer to cooling rack.

    Thanks! Luckily they’re actually decently healthy considering they’re cookies…so maybe our angry friend’s pants will fit after all!
