Omega-3 Pumpkin, Carrot & Raisin Quick Bread

Makes 1 loaf, about 16 slices

Out with the old, in with the new—that’s your motto.  Which explains why zucchini has a bone to pick with you.  The second fall rolled around you said, “So long,” to summer squash in lieu of the almighty pumpkin.  At first you felt bad.  But then you decided zucchini just needed to get over it because you’ve got your eyes set on the Omega-3 Pumpkin, Carrot & Raisin Quick Bread.


2 C. whole wheat flour

¾ C. flaxseed meal

2 tsp. baking soda

½ tsp. sea salt

1 tsp. cinnamon

1 tsp. pumpkin pie spices

1 C. organic pumpkin puree

¼ C. honey

½ C. unsweetened almond milk

1 large egg

½ C. carrots, shredded

½ C. raisins

½ C. walnuts (optional)


Preheat oven to 350.

Combine flour, flaxseed meal, baking soda, sea salt and spices in a small bowl.  Set aside.  Beat pumpkin, honey and almond milk until combined.  Beat in egg; gradually beat in flour mixture until combined.  Mix in carrots, raisins and walnuts on low speed.

Transfer dough to a 9 x 4 loaf pan.  Bake for 55-60 minutes, testing doneness with a toothpick.  Can also be made into muffins, but bake for around 20-25 minutes and track the progress closely.

FOOD THAT LOVES YOU, TOO:  Pumpkin is a powerful fruit, full of fiber.  Low in fat and calories, it’s rich in beta-carotene, which means it can actually reverse skin damage from the sun.  It’s orange flesh means it’s also mood boosting.
