Super Bowl XLVI Recipe Roundup

You’re stressing because you’re throwing a Super Bowl Party for the friends and fam but you don’t know what to make.  Well, you’re in luck because of this delicious, All-American, Super Bowl-worthy recipe list. Now all you have to do is sit back, relax and enjoy the people around you!  Oh–and don’t forget to cook!

Set the Scene:

Do you have a favorite team?  Consider a Red, White & Blue theme (since the teams are pretty much representing the SAME exact colors anyway).  No offense to die-hard fans.  You’ll probably be able to borrow decor from 4th of July!  Easy!

CUTE ALERT!!!  Katie Brown turned lemons into mini footballs and created a fun Super Bowl centerpiece.

Drinks:

You won’t disappoint if you stock up on beer for the Super Bowl.  But put some thought into it…make it special by serving local beers, beers from Boston or New York, or an organic selection that pairs well with what you’re serving.

Starters:

Fresh & Easy Cantaloupe Salsa.  Cool, spicy and tangy.  Serve with your favorite healthy chips, like Garden of Eatin‘ Red Hot Blues.

Cranberry Goat Cheese & Herb “Hot Pockets.”  Like grown-up pizza rolls.  They’ll disappear in a flash!

Baked Kale Chips.  There’s nothing fried about ’em.  For a big crew, buy a few heads and bake away.  You’ll be amazed how quickly they’ll go.  Even the kids will love!

Spiced Party Nuts.  I’ve said it before, and I’ll say it again.  No party is a party without party nuts.  And your guests will certainly go nuts over these sassy little numbers!

Sides:

Super Bowl Sunday Salad.  Flavorful and colorful.  Just what you want in a salad.  A real crowd pleaser!

Flash Roasted Green Beans.  These green machines go faster than it takes to cook ’em!

Spicy Sweet Potato Fries.  Because what’s better with an All-American meal than fries?

Not Your Grandma’s Potato Salad.  Leave the mayo in the fridge and try this slightly refined potato salad on for size.  Ol’ Grammie might not like the idea of it, but once she tastes, she’ll never go back!

Main Course:

Baked Rosemary Chicken Strips.  Kids will love ’em and parents will feel like kids again!

Pulled Pork Sliders.  Might be the easiest part of the entire meal…thanks to the crock pot!

Black Bean Patties with Mole Glaze.  Add instant chic to your football party by throwing in a little vegetarian fare.  Plus, your friends with food restrictions will love you for it.

Oh How She Glow’s Itty Bitty Carrot Cake Cookies.  You wouldn’t know these were vegan…or a healthy cookie!  YUM!

Phew!  Now, get to work STAT.  Super Bowl starts in 24 hours!

Turkey Tartlets

Turkey Tartlets

Makes 12 tartlets

If Thanksgiving dinner were for every meal, well, you’d be one stuffed turkey.  And let’s be honest—you don’t need that.  Save the stuffing for the bird and opt for Turkey Tartlets.  They’re everything Thanksgiving sans the all-too-familiar food coma.  And they’re the cutest darn things, too!

Ingredients:

1 package purchased puff pastry, thawed

3 small organic red potatoes

3 strips applewood smoked bacon, cubed

1 Tbsp. fresh sage, chopped

1 clove garlic, minced

½ C. onion, chopped

½ C. carrot, chopped

½ C. Pink Lady apple, chopped (or favorite tart apple)

½ lb. ground white turkey meat

½ C. white wine

Salt & pepper to taste

½ C. shredded Gruyere cheese

Directions:

Preheat oven to 400.

Bake potatoes directly on rack for 25-30 minutes.  Remove and set aside.  When cool, cut into ½”-thick slices.  Lightly grease a cupcake tin with butter and set aside.

Fry bacon and sage in a small pan.  Drain drippings, reserve 1 Tablespoon and transfer reserve drippings into a separate large pan.  Sautee onion, carrot and apple drippings until soft, about 5 minutes.  Add turkey meat and cook through.  Use a meat masher or spoon to break the meat into small pieces.  Once cooked, add wine and reduce.  Season with salt and pepper.

Cut puff pastry into 3”x3” pieces and place directly into cupcake tin.   Place one slice of potato at the bottom of each tin.  Cover with turkey until each mold is almost full.  Top with Gruyere cheese.  Bake in oven for 20 minutes, allow to cool 5 minutes.  Remove from cupcake tin and place into your favorite cupcake molds before serving.

Fresh and Easy Cantaloupe Salsa

Fresh and easy cantaloupe salsa

Serves 6 – 8

Janet Jackson was onto something when she sang Opposites Attract.  Because it’s true—when sweet meets spicy, magic happens.  The Fresh and Easy Cantaloupe Salsa is proof in the pudding.  Its cool and refreshing meets a little too hot to tango.  Just like that fling you had with You-Know-Who in summer ’06.

Ingredients:

1 Small cantaloupe melon, diced

1 Shallot, minced

1 Fresh jalapeño pepper

¼ C. fresh cilantro, finely chopped

Juice of one lime

Zest of one lime

Sea salt & cracked pepper to taste

Directions:

Place all ingredients into mixing bowl and stir gently to combine.  Chill well.  Serve with blue corn tortilla chips or topped on your favorite flakey white fish or chicken.

Grilled Peaches and Burrata

Grilled Peaches and Burrata with Mint and Sunflower Seed Pesto

Serves 6 – 8

Peaches and cream.  It’s no wonder the delicious dish inspired the moniker of a to-die-for complexion. The fact is, sweet peaches caramelize deliciously on the BBQ.  Paired with creamy Burrata cheese and fresh Mint and Sunflower Seed Pesto, Grilled Peaches and Burrata is a knock-out summer appetizer.

Ingredients:

1 Tbsp. olive oil

3 Organic yellow peaches

2 Balls Burrata cheese

Sea salt & cracked pepper to taste

Mint and Sunflower Seed Pesto

Directions:

Preheat the grill to medium-high.

Wash, pit and quarter the peaches.  Brush a generous amount of olive oil onto the peaches.  Grill for 3-4 minutes per side. Wrap Burrata in two separate pieces of foil and place on grill two minutes before peaches are done—just to get it nice and warm.

Remove from grill and prep two separate serving dishes to share, placing peaches around Burrata and garnishing with fresh pesto.

Omega-3 Lemon Basil Quick Bread

Makes 1 loaf

Omega-3_lemon_basil_quick_breadOut comes a freshly baked loaf of bread and suddenly you’re carb-allergic.  Newsflash!  Unless you’re gluten-free or have a wheat allergy, carbs are good for you.  Well, the right kind of carbs are good for you.  Take the Omega-3 Lemon Basil Quick Bread made with whole wheat flour, flaxseed, olive oil and fresh-from-the-garden basil and lemon.  This sensational summer bread will have your complexion, hair and bod (yes, bod—you can still lose and maintain weight when you consume good carbs) looking young and fabulous.

Ingredients:

2 C. whole wheat flour

¾ C. flaxseed meal

2 tsp. baking soda

½ tsp. sea salt

3 Tbsp. olive oil

¼ C. honey

½ C. part skim ricotta cheese

1 large egg

½ C. fresh basil leaves, torn

Zest and guts of 1 lemon

Directions:

Preheat oven to 350.

Combine flour, flaxseed meal, baking soda and sea salt in a small bowl.  Zest lemon and remove peel.  Chop guts of lemon into little pieces.  Beat oil, honey and ricotta until combined.  Add egg, beat well, then slowly beat in basil, lemon zest and lemon.  Gradually beat in flour mixture until combined.

Transfer dough to a 9 x 4 loaf pan.  Bake for 55-60 minutes, testing doneness with a toothpick.

Spicy Sweet Potato Fries

Spicy Sweet Potato Soup

Some like it hot and you happen to be one of those people.  From eggs to pizza, everything you cook gets kicked up a notch (or two).  So it made sense that you’d add some heat to sweet potatoes.  Surprisingly, instead of burning your mouth off, the sweet and spice created a savory harmony.  It was a match made in Heaven—and you were still able to satisfy your fiery habit.

Ingredients:

2 lb. sweet potatoes or yams

2 Tbsp. olive oil

1 tsp. cumin

1 tsp. paprika

1 tsp. chili powder

1/8 tsp. cayenne pepper

Sea salt & cracked pepper

Directions:

Preheat oven to 425.

Using a mandolin or knife, slice potatoes into fries.  Place fries in a large mixing bowl and coat with rest of ingredients.  Place seasoned fries in a single layer on a cookie sheet.  Let bake in oven for 30 minutes, or until cooked to a golden crisp.  At 15 minutes, flip potatoes.

Summer Fruit & Spinach Salad with Lemon Cilantro Dressing

Summer Fruit & Spinach Salad with Lemon Cilantro Dressing

You’re a summer lover.  And on a bright and sunny summer day, all you want is a bright and sunny salad.  Bursting with flavor, vibrant colors and assorted textures, the Summer Fruit and Spinach Salad will certainly suit your heart’s desire.

Ingredients:

Salad

4 C. organic spinach, chopped

1 mango, diced

1 container strawberries, hulled & quartered

¼ C. grated Cotija cheese

¼ C. pumpkin seeds

Dressing

¼ C. extra virgin olive oil

Juice of one lemon

2 Tbsp. cilantro, minced

1 tsp. garlic, minced

½ tsp. sea salt

½ tsp. pepper

Directions:

Whisk together dressing ingredients and chill in fridge. Dressing lasts up to a week.

Rinse, dry and prepare spinach and fruit.  Place in a serving bowl.  In a small pan, toast pumpkin seeds until they reach a golden brown.  Remove from heat.  Before serving, toss salad with dressing and top with cheese and pumpkin seeds.

Main course?  Serve with grilled avocado, chicken or shrimp.

Memorial Day Recipe Roundup

You’re stressing because you’re throwing a Memorial Day BBQ for the friends and fam but you don’t know what to make.  Well, you’re in luck because I’ve put together my favorite BBQ recipes from Food, I Love You! and some other food bloggers I’m currently obsessing over.  Now all you have to do is sit back, relax (wine in hand) and enjoy the people around you!  Oh–and don’t forget to cook!

Drinks:

Go all out and create a signature cocktail.  Get inspired from this Your Daily Thread  list.

Starters:

Baked Kale Chips.  There’s nothing fried about ’em.  For a big crew, buy a few heads and bake away.  You’ll be amazed how quickly they’ll go.  Even the kids will love!

Fire up the grill with The Kitchn’s Rosemary Lemon Kebabs.  This recipe calls for lamb but any meat would be delish!

Desserts:

Ice Cream Social Network.  What’s more all-American than an ice cream social?  With berries that are so this-season, you’ll be the sweetest belle of the BBQ!

Mango Frozen Yogurt by Yum Yum Yummers.  Looks deliciously tangy and you don’t even need an ice cream maker!

Spiced Party Nuts

Makes about 4 Cups

You’re an entertainer.  Which is why you know party nuts rule parties.  They’re an appetizer, conversation starter and satisfier of late night munchies.  Whether you’re at Happy Hour or throwing a backyard BBQ, a party isn’t truly a party without them.  These Spiced Party Nuts are savory and crunchy with just the right amount of heat.

Ingredients:

1 C. raw whole almonds

1 C. raw peanuts

1 C. raw cashews

1 C. raw walnuts

1 Tbsp. unsalted butter or olive oil

1 Tbsp. Dijon mustard

1 Tbsp. Worcestershire

1 tsp. garlic powder

1 tsp. onion powder

1 tsp. chili powder

½ tsp. cayenne pepper

1 tsp. sesame seeds

1 tsp. salt

Directions:

Preheat oven to 350.

Place all raw nuts into large mixing bowl.  In a smaller bowl, combine all wet ingredients with spices and mix well.  Dress nuts with wet ingredients until fully coated. Place on baking sheet and bake for 15 minutes.  Remove from oven, transfer to cooling rack lined with paper towels and let cool.

Stores well for up to two weeks in an air-tight container.

FOOD THAT LOVES YOU, TOO:  Raw nuts are a great way to cut unnecessary sodium out of your diet.  Yes, nuts contain fat, but almost 90% of that fat is unsaturated, the good kind of fat.  Do your body a favor by reaching for raw nuts.

Baked Kale Chips

Serves 6-8

You could eat chips and salsa for breakfast, lunch and dinner.  But indulging in that deep-fried, salty corn chip isn’t doing you any favors.  Especially lately—your skin looks like a pre-pubescent teen’s, you’re forgetful in meetings and, well, your pants are a tad tight.  So you reach for kale.  You season it, bake it to a crisp and reap tons of good-for-you benefits.  Baked Kale Chips are certainly a snack your body will thank you for.

Ingredients:

1 bunch organic kale

3 Tbsp. olive oil

½ tsp. cayenne pepper

½ tsp. paprika

2 tsp. sea salt

cracked pepper to taste

Directions:

Preheat oven to 425.

Remove kale leaves from stems and rinse thoroughly.  Set aside until dry.  Break leaves into smaller pieces and place into large mixing bowl.  Add all other ingredients and mix well. Place dressed kale in single layer onto baking sheet.  Bake for 12-15 minutes.  For maximum crunch, let cool on sheet.  Serve solo or with a nice crudite platter.

FOOD THAT LOVES YOU, TOO: Kale is a superfood with so much to offer.  It’s packed with vitamins and minerals like lutein to protect your peepers, cartenoids to prevent UV damage and sulfuric compounds which help your liver ward off certain cancers including stomach, breast and colon.
